Staple& By Kimberly Schaub Photos by Peter West Carey D INING IN THE TRENDIEST NEW RESTAURANT in Seattle isn’t why Chef Ethan Stowell wants you to visit his latest eatery, Staple and Fancy Mercantile, which opened in Ballard on August 15th. He sees this as a continuation of his growth and personality as a chef, restaurateur, and, now, author. His fi rst cookbook, “Ethan Stowell’s New Italian Kitchen,” was released on September 21st. Both enterprises are personal -Ballard is his home neighborhood, and the cookbook refl ects his focus, which is entirely about food.
